With "the reconstruction of Japanese cuisine" as its concept, HATSU presents an original style of innovative cuisine with a base in seasonal Japanese ingredients and techniques combined with flavors, fermented ingredients, and traditional culinary techniques from Nordic regions.
HATSU is strongly influenced by the "produced locally and consumed locally" aspect of New Nordic Cuisine and aims to recreate this by proudly using Japan's local ingredients.
