HATSU. Exceptional, innovative cuisine, awarded 1 Michelin Star in less than a year since its opening. With "the reconstruction of Japanese cuisine" as its concept, HATSU presents an original style of innovative cuisine with a base in seasonal Japanese ingredients and techniques combined with flavors, fermented ingredients, and traditional culinary techniques from Nordic regions.
HATSU is strongly influenced by the "produced locally and consumed locally" aspect of New Nordic Cuisine and aims to recreate this by proudly using Japan's local ingredients.
Guests can arrive filled with anticipation of what exciting new flavors and aromas they will experience for the first time. HATSU promises dishes that will amaze each of the five senses, provide a time of wonder and perfect relaxation, and will undoubtedly leave guests with an unforgettable dining experience.

About the Restaurant

The name HATSU originates from two kanji letters: the first letter 初 which means "first" or "new" and the second letter 発 which means to "send out." The name contains the wish to become a restaurant where customers can find many new experiences, as well as to create and send out new innovative ideas to the world.
Its head chef Chef Kohei Masumoto moved to Denmark in 2006 and began training in Copenhagen, the birthplace of the New Nordic Cuisine. He returned to Japan after 8 years where he became head chef at West Japan Railway Company's luxury express train "Mizukaze" before opening HATSU in 2018.
